Ingredients

Main ingredients

  • 4 fillets salmon fillets
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup roasted red peppers, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together spinach, feta, and roasted red peppers.
  • Cut a slit into the side of each salmon fillet to create a pocket.
  • Stuff each fillet with the spinach mixture.
  • Drizzle olive oil over the stuffed salmon and season with salt and pepper.

Cooking

  • Place the salmon on a baking sheet and bake for 20-25 minutes or until cooked through.

Notes

Serve the baked salmon hot, garnished with lemon wedges. It pairs well with a light salad, steamed vegetables, or quinoa. Store cooked salmon in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving. Avoid over-stuffing the fillets and consider using fresh herbs for added flavor. You may also swap feta for goat cheese or ricotta, and add olives or sun-dried tomatoes for variations.
