Ingredients

Main Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 cups broccoli florets
  • 1 cup shredded cheese (cheddar or your choice) Use your favorite cheese variety
  • 1/2 cup heavy cream or milk Use heavy cream for a richer texture
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil or butter For sautéing the garlic

Instructions

Preparation

  • In a large pot, heat a little olive oil or butter over medium heat.
  • Add the minced garlic and sauté until fragrant.

Cooking

  • Add the orzo and vegetable broth to the pot; bring to a boil.
  • Reduce heat to low and stir in the broccoli florets. Cover and simmer for about 10 minutes, or until the orzo is cooked and the liquid is mostly absorbed.
  • Stir in the heavy cream and shredded cheese until melted and creamy.
  • Season with salt and pepper to taste.

Serving

  • Serve warm and enjoy your creamy, cheesy comfort food!

Notes

Make sure to stir the orzo occasionally while it simmers to prevent it from sticking to the bottom of the pot. Adjust the amount of cheese based on your preference—feel free to mix different types for added flavor! Leftovers can be stored in an airtight container for up to 3 days, and reheating may require adding a splash of milk or broth.
